Yummy Summer Trifle

I made a delicious trifle for our Summer Beach Bash Crop at TSF recently and everyone loved it! It is a cool, delicious dessert that makes the perfect ending to a meal.

I promised to share the recipe and I am finally getting around to posting it. It is actually a variation of a recipe I got from Carolyn many years ago. I hope you give it a try - it is truly yummy!

Summer Trifle

2 pkgs. each (85 g or 3 oz.) orange, strawberry and lime Jell-O Powder
2 cups cold milk
2 pkgs. (4-serving size) Jell-O Vanilla Instant Pudding
1 large tub Cool Whip Whipped Topping, thawed, divided
1 frozen pound cake, thawed, cut into 1/2 inch cubes
2 cans (10 oz/284 ml) Mandarin Orange Segments, drained

Dissolve orange jelly powder in 2 cups boiling water. Stir in 1 cup cold water. Pour into 9 x 13 inch pan. Chill for 3 hours. Cut into 1/2 inch cubes. Repeat using the strawberry and Lime Jell-O.

Pour milk into large bowl; add pudding mixes. Beat with a wire whisk for 2 minutes; let stand for 5 minutes. Gently stir in 2 cups of the whipped topping.

In a large trifle or glass bowl, layer the lime Jell-O cubes, 1/3 cake cubes, 1/3 orange segments, and 1/2 the pudding. Repeat with orange Jell-O cubes and then with strawberry. Your last layer will end with the orange segments. Top with remaining Cool Whip.

Chill for 1 hour or until ready to serve. Garnish as desired.
